Black garlic is simply regular garlic that has been fermented for a month. The process that turns garlic cloves dark, changes their consistency into that of jelly, and gives them a sweet taste, which reminds some people of a plum or fig. Black Garlic has a much higher content of allicin, the active ingredient in White Garlic that imparts its benefits, but without the odour. Additionally, Black Garlic is rich in amino acids and has almost double the amount of antioxidants when compared to White Garlic.
